How to Create a Dessert Table:
When deciding on your selection, here are a few guidelines that may help.
Calculating the amount you will need:
Cakes are expensive and you don't want to order more than you will eat, yet you want to have enough for all your guests. What a dilemma!
It is very difficult for anyone to tell an exact amount that you will need. It is usually best to slightly “over budget” but try to have items that can be handed out to guests afterwards or cakes that could be served again the next day
Usually a 10 inch cake will slice into 15-20 reception-sized servings:
For 50 guests (2 - 3 )cakes with a cookie or pastry tray For 75 guests (3 - 4 )cakes with an additional cookie or pastry tray For 100 guests (5 – 6) cakes and (1-2) pastry trays
Good items to serve in addition to cakes:
- Assorted cookies, Baklava, Biscotti, Caramel brownies, Macaroons
- Chocolate Chip Pie (one pie cut into 24 pieces and each slice individually dipped) ($55.00)
- Chocolate Dipped Strawberries ($2.50 each)
- Mini ($2.50 each) or Small ($3.50 each) Fresh Fruit Tarts
Keeping and Storing Cakes and Pastries Some cakes are delicate – they cannot stand for hours at room temperature (cakes with whipped cream or soft custards). Outdoor functions may limit the use of cream cakes. Transportation in summer heat can be difficult.

Slicing cakes
Nutty, chunky textured cakes and sticky, rich creams are great to eat but may be difficult to slice.
The Best Cakes for Slicing
- Baileys and Cream Torte (usually a whipped cream frosting but you can order
with a buttercream if desired)
- Cheesecakes
- Raspberry (served with raspberry sauce)
- Caramel Pecan (served with chocolate sauce)
- Amaretto
- Vanilla
- Chocolate Caramel Hazelnut Torte
- Chocolate Raspberry Torte (served with fresh raspberry sauce)
- German Chocolate Torte
- Chocolate Almond Torte (decorated with whipped cream)
- White Chocolate Carrot Cake
More Difficult to Slice
- Black and White Mousse Torte (we usually score the hard chocolate glaze
into 14 slices)
- Chocolate Tiramisu Torte (rich mascarpone cream cheese in the center-delicious but a slicing challenge!)
- Peanut Butter Torte (It melts easily)
- Viennese Meringue Torte (whipped cream and fresh strawberries- very
delicate! But so wonderful!)
